Catalan cream foam


Ingredients
• 1/2 lt of cream
• 10 yolks
• 15 gr. of flour
• 150 gr. of sugar
• 1/2 lt of milk
• 1 branch of cinnamon
• 1 branch of vanilla
• Skin of 1/4 of lemon
• Skin of an orange
Preparation
Boil the milk with vanilla, cinnamon, the orange and the lemon for about 5 minutes, and then use it to make an infusion, whiten the yolks with the sugar and the flour.Add to the infusion to the yolks and cook everything in a very slow fire so that the flavour to flour disappears.
Once cooked, pass the cream through a strainer and let it to cool.
