Panellets




Ingredients

400 grams of sugar
2 eggs
500 grams of white sweet potatoes
100 grams of hazelnuts
400 grams of ground almond
50 grams of flour
100 grams of pinenuts
50 grams of grated chocolate
100 grams of preserved cherries
half glass of currant syrup

Preparation

First, you must cook the sweet potatoes, once they were cooked begin to dry off to the oven, then remove their skin and sift them.

In a recipient, put on the sweet potatoes pasta, the ground almond, the two yolks and the sugar, add a little bit of grated rind lemon and knead it well. Knead it above a marble sprinkled with flour, then try to make a cylinder and cut it in four parts.

In one of them mix the grated chocolate and in other the currant syrup, make some balls a little bigger and longer than a nut, put on above it a cherry and sprinkle the sugar. Make 2 equal size balls using the other ones and muffle them with the white of the egg, they wrap up in pinenuts and grated hazelnut.

Once the panellets are ready, put them into a very hot oven for about six or seven minutes.
